VEGAN + RAW KELP NOODLES + HEMP SEED PESTO + CRUSHED RED PEPPER


Things have been very busy this month in the world of Wild Plate. I've been working around the clock on a large order of 950 of my vegan + raw candy bars "THE FIX". More info about that coming soon! From finding and setting up wholesale accounts, ordering the proper equipment, securing a commercial kitchen space in Louisvlle, KY, and making the bars, it hasn't left me much time to get crafty in the kitchen. Being surround by sweet treats and chocolate all day is not the worst thing in the world, but I have been craving anything and everything green to fuel up for these long 16 hour days of stirring, pressing, dipping, and wrapping.

Last night I took a break and drove back to Nashville for a some work/ play and managed to whip up this refreshing kelp noodle pesto dish before hitting the road. I love using kelp noodles! They are free of allergens and only have 6 calories per serving making them a great low carb alternative. They have a neutral taste and are slightly crunchy right out of the bag. Marinate them in any sauce that contains salt and they will soften and soak in the flavor. Enjoy!

KELP NOODLES + HEMP SEED PESTO

Ingredients

2- 12 ounce packs clear kelp noodles ( I like sea tangle brand)
2 cups basil leaves, tightly packed
1/2 cup shelled hemp seeds
1.4 cup fresh parsley, tightly packed
1/4 cup extra virgin olive oil
1 tablespoon lemon juice, fresh squeezed
1 tablespoon nutritional yeast
2 cloves garlic, peeled
1/2 teaspoon sea salt
1/4 teaspoon fresh ground black pepper
1/4 teaspoon red pepper flakes

Directions

1. Rinse kelp noodles and pat dry.
2. In food processor or high-speed blender add basil, hemp seeds, parsley, olive oil, lemon juice, nutritional yeast, garlic, sea salt, black pepper, and red pepper flakes. Pulse until slightly chunky.
3. In large mixing bowl, lightly toss noodles with pesto sauce until coated. Let stand for 30 minutes until noodles become soft. Serve room temperature or chilled. Enjoy!
