Today I've been sifting through content on my instagram account @wildplate6 and thought I'd start doing a few reposts of some recipes I created over this last year that are easily accessible. Because let's face it, not everyone has instagram, and who really wants to scroll through their phone for that picture they faintly remember seeing of a recipe they wanted to make. No need to worry! Some old and all new recipes will be posted here. This is one of my favorite quick, easy and nourishing snacks or a satisfying dessert.
Makes 1 cup (serves 2)
3/4 cup unsweetened almond milk
1/4 cup unsweetened coconut milk
1/4 cup chia seeds
1/4 cup crushed toasted almonds
1/2 vanilla bean, seeds only
1/4 teaspoon almond extract
20 drops liquid stevia (or more to your desired sweetness)
Dash of fine sea salt
1. In a small bow add: almond milk, coconut milk, chia seeds, vanilla bean seeds, vanilla extract, almond extract, stevia, and sea salt.
2. Cover and let sit for 30-40 minutes. In the meantime, toast crushed almonds.
3. Serve chilled and sprinkle with toasted almonds. Enjoy!
