VEGAN ROSE INFUSED COCONUT YOGURT PARFAITS + CANTALOUPE + PISTACHIOS


I created this recipe as part of a Sunday brunch. It takes less than ten minutes to put together yet everyone that tries it will assume you spent hours in the kitchen culturing your own yogurt. Usually I do like to make my own raw coconut yogurt however, sometimes I am unable to find the ingredients I need here in Nashville, or just don't plan far enough ahead.

So here's my solution! Have you tried the plain coconut based greek yogurt by "So Delicious"? Wow! it is absolutely amazing. Thick, rich, and creamy, you'll never guess it has no dairy. It's a great base for parfaits galore. Using rose water gives it a florally essense that goes perfectly with ripe cantaloupe and raw pistachios for a little crunch.

ROSE INFUSED COCONUT YOGURT PARFAITS + CANTALOUPE + PISTACHIOS

Serves 4

Ingredients
4- 6 ounce containers "So Delicious" plain greek coconut yogurt
3 teaspoons rose water
2 teaspoons honey, agave, or other sweetener you like. Try liquid stevia for low-sugar option!
1 cantaloupe cubed or use a small melon ball scoop
1/4 cup chopped raw pistachios
Optional honey or agave for drizzled + edible rose petals as a garnish

Directions
1. In medium bowl add all the containers of coconut yogurt. Stir in rose water and sweetener of choice.
2. Layer parfait, yogurt, cantaloupe, pistachio twice. Garnish with a few edible rose petals and pistachios. Enjoy!
