A few weeks ago, I ventured into a Whole Foods here in Nashville and had a little love affair with these heirloom carrots. They are now in season and I've been finding any excuse I can to use them in my recipes. Aren't the colors stunning?
I came up with this light and refreshing salad that is good for any occasion! Make it for sunday brunch, take it to a potluck, BBQ with friends, or serve as a starter salad before dinner. The colors alone will have people mesmerized. It's definitely a conversation starter and takes 15 minutes to make. Bonus!
HEIRLOOM CARROT RIBBONS + FRESH DILL + MEYER LEMON
4 cups Heirloom carrot ribbons
1/4 cup fresh dill, minced
2 tablespoons extra virgin olive oil
2 tablespoons meyer lemon juice, fresh squeezed
1/4 teaspoon sea salt or more to taste
1. Using a potato peeler, make carrots into ribboned pieces.
2. in medium mixing bowl add carrots, dill, olive oil, lemon juice, and salt. Toss lightly and serve immediately. Enjoy!
