Vegan chocolate peanut butter sundaes on a Sunday. Yes please!

This morning I woke up with a crazy sweet tooth that had to be tamed! Anyone that knows me, knows I love anything chocolate peanut butter. As a kid, I would hoard my Reese's Peanut Butter Cups from Halloween and Christmas under my bed to make sure I had enough to get me through the year. As an adult, I prefer a purer simpler version by taking a spoon, dipping it right into that jar of peanut butter, scooping out a giant mound, and topping it with a chunk of dark chocolate for a sweet treat. Anyone else with me?

With so many different peanut butters on the market, one could spend hours looking at ingredient labels trying to find one that's straight up pure ingredients. Most contain added refined oils and sugars that are totally unnecessary and unhealthy.

Chocolate Peanut Butter Fix Sundaes

Serves 4


Chocolate peanut butter fudge
3 tablespoons raw light agave (or other sweetener you like)
2 tablespoons purely cacao peanut butter
2 tablespoons raw cacao powder
2 tablespoons raw coconut butter, melted
1 teaspoon vanilla extract
pinch of fine sea salt

Sundae fixings
1 pint vegan chocolate ice cream (I like luna and larry's)
1 FIX candy bar, frozen, cut into chunks (order here)
2 tablespoons crushed peanuts or almonds

Chocolate peanut butter fudge
1. Place all ingredeints in high-speed blender. Blend on high for 1-2 minutes until smooth.

1. place 1/2 cup ice cream in bowl. Top with chocolate peanut butter fudge, fix candy bar chunks, and crushed peanuts or almonds. Enjoy!
