Truth is even when I did eat meat, I was pretty picky about what kind, what it looked like, and how it was prepared. I was never a fan of buffalo chicken wings but that spicy sauce and ranch dip combo were like kryptonite.
We all know classic buffalo wings are super unhealthy, right? However, they are one of most consumed and favored appetizers out there. I think it’s safe to say anything coated in a fried crispy crust then drenched in hot sauce and dipped in ranch dressing is an instant crowd pleaser!
This veganized gluten-free version is simple, healthy, has minimal cleanup and great served as a side dish or appetizer at a party or event. The cauliflower gives a nice hearty base and the spice from the buffalo sauce is balanced out with a good dip of cooling vegan ranch (recipe coming soon). These are super satisfying and sure to become a favorite. Speaking of ranch have you tried Just Mayo's dairy-free ranch dressing? Oh my it's AMAZING and a great option when you're crunched for time and don't want to make your own.

Buffalo Cauliflower Bites
(serves 4 as an appetizer)
1 head cauliflower, chopped into bite sized pieces
1/2 cup gluten-free flour (I used Bobs Red Mill baking 1-1 gluten-free flour)
1/2 cup unsweetened plain almond milk or another dairy-free alternative
1 teaspoon garlic powder
1 tablespoon extra virgin olive oil
1/2 teaspoon sea salt
1/4 teaspoon black pepper, freshly ground
2 tablespoons earth balance or another dairy-free butter, melted
2/3 cups Hot Wing sauce (I used Mr. Spice Brand)
- Heat oven to 450 degrees. In large mixing bowl whisk flour, water, garlic powder, salt, and pepper. Add cauliflower pieces and toss until evenly coated.
- Drizzle olive oil evenly over baking sheet. Place coated cauliflower pieces on baking sheet and bake for 15 minutes turning once.
- Rinse the same large mixing bowl and whisk melted vegan butter and Mr. Spice Hot Wing sauce. Take cauliflower out of oven and add to mixing bowl with sauce tossing lightly to coat.
- Spread cauliflower out on same baking sheet and place back in oven for 25-30 minutes flipping a few times so you get a good crispy edge on all sides. Serve with vegan ranch and celery sticks.
