VEGAN + GLUTEN-FREE RUSTIC CHERRY GALETTE W/AMARETTO MASCARPONE

Happy Memorial Day Weekend! To kick off the festivities, I've teamed up with one of my favorite companies So Delicious Dairy Free to create a recipe that is perfect for all those holiday parties, potlucks, and brunches. You guys, I am really excited about this one! It's probably one of the best desserts I've ever made and happens to be gluten-free, dairy-free, soy-free has no refined sugars or oils, and is totally vegan. I literally screamed, "YES" when it came out of the oven.  With cherry season right around the corner (and the fact that I am always looking for an excuse to make something sweet) I came up with this rustic cherry galette with an amaretto mascarpone filling then sprinkled...

GLUTEN-FREE + VEGAN BANANA CHOCOLATE CHUNK BREAD

I always end up buying more bananas than I can consume before they get to that mushy spotted brown phase aka banana bread perfection phase. Yes, they look very unappetizing but the darker and more squishy they are the better for baking. On occasion, I'll peel them, wrap them up, and throw them in the freezer for smoothies but let's be honest, I'd rather make this mouth-watering banana bread with chunks of dark chocolate then slathered it with some dairy-free cream cheese for a quick breakfast on-the-go. The texture of this bread is a little different than the traditional cake-like version. It is more dense, less sweet, and very moist with a slight crunch around the edges. I know the word "moist"...

ARUGULA SALAD + SHAVED FENNEL + PEAR + SLIVERED ALMONDS

There's no doubt fall is here which means a new selection of local produce. Arugula, fennel and pear are gracing the outer isles of natural markets and make a refreshing combination when paired together. A light lemon, honey dressing adds a touch of sweetness to the peppery arugula, creating another layer of depth to this salad. I have never really experimented much with fresh fennel in the past because the thought of a licorice tasting bulb, just never appealed to me. Don't get me wrong, I like licorice but tend to gravitate towards it in its sweet candy form. While getting some groceries at the food co-op today, a sandy blonde gentleman was restocking fresh fennel that looked like something...

VANILLA CHIA PUDDING + CRUSHED TOASTED ALMONDS

Today I've been sifting through content on my instagram account @wildplate6 and thought I'd start doing a few reposts of some recipes I created over this last year that are easily accessible. Because let's face it, not everyone has instagram, and who really wants to scroll through their phone for that picture they faintly remember seeing of a recipe they wanted to make. No need to worry! Some old and all new recipes will be posted here. This is one of my favorite quick, easy and nourishing snacks or a satisfying dessert. Makes 1 cup (serves 2) Ingredients3/4 cup unsweetened almond milk1/4 cup unsweetened coconut milk1/4 cup chia seeds1/4 cup crushed toasted almonds1/2 vanilla bean, seeds only1/4 teaspoon almond extract20...
