Another vegan + gluten-free recipe to wet-your-whistle! A few quick notes:
I handmade the corn tortillas with masa flour, water, and a squeeze of lime juice (recipe on back of masa flour bag) but feel free to just get pre-packaged if short on time.
Also, I really like the brand Upton's Natural Bar-B-Que jackfruit that comes ready to go which makes this recipe incredible quick and easy. Enjoy!
BBQ Jackfruit tacos
8 handmade or your favorite brand of corn tortillas
1 1/2 cups Upton's Naturals Bar-B-Que Jackfruit
1 medium avocado, sliced
1 cup red and green cabbage, shredded
1/4 cup radishes, thinly sliced into rounds
1/4 cup pickled red onion
2 tablespoons fresh cilantro, chopped
1 tablespoon hot sauce of choice
Lime cream sauce
1/4 cup vegan mayonnaise such as Just Mayo or Veganaise
2 tablespoons lime juice, fresh squeeze
1 teaspoon smoked paprika
1. Make tortillas or heat pre-made in skillet over medium heat.
2. Make lime cream by mixing vegan mayo, lime juice, and smoked paprika in a bowl until combined.
3. Top each tortilla with bbq jackfruit, red and green cabbage, radishes, pickled onions, slice of avocado, fresh cilantro, lime cream sauce, and a little hot sauce. Serve immediately. Enjoy!
